Cupcake of the Month


I need to change my layout around and make the sidebar a little wider so that the Cupcake of the Month can be added over there. Anyways heres the first Cupcake of the Month Recipe!

Red Velvet Cupcakes with Vanilla Cream Cheese Frosting (and for those that don't like Cream Cheese Frosting you can alternate to make a vanilla frosting)

Cake:
2 1/4 cups sifted cake flour
1/4 cup unsweetened cocoa powder (I use pernogotti..its really good)
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temp.
1 cup buttermilk
2 large eggs
2 teaspoons vanilla extract
1 tablespoon red food coloring
1 teaspoon distilled white vinegar
Cupcake Liners

Frosting:
1 8oz. cream cheese
1 stick of unsalted butter
2 cups powdered sugar/confectioners sugar
1 tsp. vanilla extract or Vanilla Bean Paste
1/8 tsp. salt
***If you don't like cream cheese frosting you can replace the cream cheese with shortening I use Spectrum from Whole Foods its vegan and much healthier (if shortening can even be considered healthy) its creamy and leaves the frosting a nice white color.

Cupcake Instructions:

Preheat the over to 350 degrees. Line cupcake pans with cupcake liners/cups. Beat on low buttermilk, food coloring, vinegar, and vanilla together in a small bowl for a few seconds until mixed. In another bowl mix cake flour, baking soda, baking powder, salt and cocoa powder. Beat butter and sugar in a large bowl until creamy. Add 1 egg butter/sugar bowl at a time, beat each egg until well incorporated. Beat in dry ingredients alternating with buttermilk/vinegar mixture in at least 4 additions. Pour batter in cupcake cups to about 3/4 of the cups and bake to about 22-27 minutes depending on the oven (Iwould start checking them at 22 minutes and stick toothpick in them until it comes out clean. Cool for 10 minutes.

Frosting Instructions:

Cream butter, cream cheese and salt until fluffy. Add sugar slowly by 1/2 cups (you may want to add more than 2 cups but after 2 cups it gets to sweet for me but make it to your liking) then add vanilla.
